Cervantes Lee (Business; Hospitality), with co-authors Zihui Ma (Hospitality) and Linchi Kwok from Cal Poly Pomona, published "Multi-Unit Restaurant Management," now available through Kendall Hunt Publishing.
The book provides in-depth strategies and practical insights for managing multi-unit restaurant businesses — a fast-evolving and essential segment of the hospitality industry. Topics include multi-unit restaurant operations, growth strategies, franchising, site selection, financing, valuation, digital marketing, technology integration, private equity, mergers and acquisitions, IPOs, SPACs, and portfolio development.
The book marks a meaningful milestone in Lee's academic journey, beginning with his first faculty appointment at the UNLV Hospitality College in January 2022. It is a direct continuation of his doctoral dissertation, "Establishing Multi-Unit Fast Casual Restaurant Education at UNLV Hospitality College: An Innovative Study" (August 2021).
