Arpita Basu (Kinesiology and Nutrition Sciences); Kenneth Izuora (Medicine); Jefferson Kinney, Arnold Salazar (both Brain Health); and Jeffrey Ebersole (Dental) published a randomized double-blind controlled trial in Nutrients on the effects of strawberry antioxidant supplementation in adults with the metabolic syndrome. The results revealed improvements in diabetes risks with intake of two-and-a-half servings of strawberries daily, which conforms to the USDA guidelines for fruit consumption for health and disease prevention. This trial was conducted in collaboration with the University of Oklahoma Health Sciences Center in Oklahoma City.
