The UNLV William F. Harrah College of Hotel Administration and "Bon Appetit" magazine announced recently that Spago chef Eric Klein will prepare the fourth dinner in the Chef Artist Dinner Series on March 12.
Klein, a native of the Alsace region of France, came to the United States and joined Wolfgang Puck's fine dining team in 1996. He spent seven years working with Puck at his restaurants Chinois & ObaChine in Los Angeles and Spago in Beverly Hills. In 2003, Klein opened the popular Maple Drive in Beverly Hills. He then launched SW Steakhouse at the Wynn and served as executive chef at Bellagio's FIX before returning to Spago as executive chef. Klein will be joined at the Chef Artist Dinner Series by members of the Wolfgang Puck family.
The evening will begin with a reception of hors d'oeuvres, wine, and entertainment, followed by a specialty five-course dinner. Each course will be paired with an appropriate wine selection donated by Southern Wine & Spirits and Larry Ruvo.
Menu items will include:
o House smoked salmon
o Spicy tuna tartar taco
o Vietnamese spring roll
o Flat iron steak skewer "Hunan style"
o Maryland Blue Crab lump crab salad
o Farmers Market Pink Lady apple salad
o Pan roasted line caught virgin striped bass
o Pan seared breast of duck
o Hand pulled apple strudel
Proceeds from the dinner will provide student scholarships and assistance to the students and faculty of the food and beverage department.
